Liege Waffle Recipe

Ingredients:

  • 3/4 cup warm milk
  • 2 teaspoons active dry yeast
  • 3 tablespoons granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 10 tablespoons butter, softened
  • 1 cup pearl sugar (or make your own by combining 1 cup granulated sugar with 1 tablespoon water and microwaving for 30 seconds)

Directions:

  1. In a small bowl, whisk together the warm milk, yeast and 1 tablespoon of granulated sugar. Let it sit for about 10 minutes until foamy.
  2. In a large bowl, whisk together the eggs, vanilla and remaining 2 tablespoons of granulated sugar. Add the yeast mixture and stir to combine.
  3. Gradually add the flour and salt, stirring with a wooden spoon until a sticky dough forms. Transfer the dough to a lightly floured surface and knead for a few minutes, adding more flour if needed, until smooth and elastic.
  4. Place the dough in a greased bowl and cover with plastic wrap. Let it rise in a warm place for about an hour, or until doubled in size.
  5. Punch down the dough and knead in the pearl sugar. Divide the dough into 10 equal pieces and shape them into balls. Place them on a baking sheet and cover with a damp cloth. Let them rest for another 15 minutes.
  6. Preheat your waffle iron and lightly grease it. Cook one ball of dough at a time, pressing it down slightly to fit the iron. Cook for about 4 minutes, or until golden and crisp on both sides. Be careful as the sugar will caramelize and become very hot.
