Recipe: Nigerian Egg Sauce & Yams

Ingredients:

  • 4 large eggs
  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 2 medium tomatoes, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon curry powder
  • 1/2 teaspoon thyme
  • 1/4 teaspoon chili powder (optional for spice)
  • Salt and pepper to taste
  • 4 medium-sized yams, peeled and cut into chunks

Instructions:

  1. In a pot, add the peeled and cut yam chunks, cover with water, and bring to a boil. Cook until the yams are tender when pierced with a fork, about 15-20 minutes. Drain the cooked yams and set aside.
  2. In a separate pan, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onions become translucent and slightly golden.
  3. Add the diced tomatoes and bell pepper to the pan and cook for a few minutes until they soften. Stir occasionally to prevent sticking.
  4. In a bowl, whisk the eggs together until well beaten. Pour the beaten eggs into the pan with the sautéed vegetables. Stir gently to combine the eggs with the vegetables.
  5. Sprinkle the curry powder, thyme, and chili powder (if desired) over the mixture in the pan. Season with salt and pepper to taste. Continue cooking, stirring occasionally, until the eggs are cooked and the sauce thickens slightly.
  6. Taste the egg sauce and adjust the seasoning if needed. If you prefer a spicier sauce, you can add more chili powder or a dash of hot sauce.
  7. Serve the egg sauce alongside the cooked yam chunks. You can either place the yams on a plate and spoon the sauce over them or serve them separately for dipping.
  8. Enjoy the Egg Sauce and Yams while they’re still warm. It makes for a delicious and satisfying breakfast or brunch dish. You can also pair it with a side of fresh salad or sliced vegetables for added freshness.

Note: Feel free to customize the recipe by adding other vegetables or spices according to your preference. Nigerian Egg Sauce and Yams are versatile, and you can make it your own by incorporating your favorite ingredients.
