Discover the Magic of Apple Pie Pancakes!

Nothing conjures up coziness quite like the classic duo of pancakes and apple pie. So why not combine them into one game-changing breakfast dish?

By sautéing chopped apples in butter with brown sugar, cinnamon, you get decadent apple pie-like chunks bursting with warming spice and fresh tartness. Toast up some pecans to add crunch.

To keep the pancakes themselves deliciously fluffy yet sturdy enough to hold all the mix-ins, use a blend of all-purpose and whole wheat flour. Baking powder helps them rise, and vanilla extract adds extra coziness. For even more flavor, you can optionally add nutmeg, ginger, and a pinch of salt.

With a pat of butter slowly melting over top, you’ve got a complete experience of sweet, tart, crunchy, warm, and melty textures in one stack of pancakes.

Beyond sheer deliciousness, apple pie pancakes also deliver comfort through their ingredients. Cinnamon evokes coziness, while maple syrup lends a touch of nostalgia. Pecans provide healthy fat to keep you satisfied. And the light flavor of apple is a friendly way to start your day. Not to mention, they fill your kitchen with the inviting aroma of an apple pie baking.

There’s no wrong way to enjoy these cozy apple pie pancakes. Just be prepared for them to fast become your new favorite breakfast tradition.

Recipe: Apple Pie Pancakes

Ingredients:

For the Pancakes:

  • 1 cup all-purpose flour (or gluten-free flour blend for GF option)
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk (or non-dairy milk for a vegan option)
  • 1 large egg (or egg substitute for a vegan version)
  • 2 tablespoons melted butter (or coconut oil for a vegan version)
  • 1 teaspoon vanilla extract

For the Apple Pie Filling:

  • 2 medium-sized apples (e.g., Granny Smith, Honeycrisp), peeled, cored, and thinly sliced
  • 2 tablespoons unsalted butter (or coconut oil for a vegan version)
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon
  • Pinch of ground nutmeg
  • Pinch of salt

Optional Toppings:

  • Whipped cream or coconut whipped cream
  • Caramel sauce
  • Maple syrup
  • Chopped nuts (e.g., pecans, walnuts)

Instructions:

  1. In a medium-sized bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt for the pancake batter.
  2. In a separate bowl, mix the buttermilk (or non-dairy milk), egg (or egg substitute), melted butter (or coconut oil), and vanilla extract. Combine the wet ingredients with the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  3. For the apple pie filling, melt the butter (or coconut oil) in a large non-stick skillet over medium heat. Add the sliced apples and cook for about 3-4 minutes until they start to soften.
  4. Stir in the brown sugar, ground cinnamon, ground nutmeg, and a pinch of salt. Continue to cook the apples, stirring occasionally, until they are tender and caramelized, about 5-6 minutes more. Remove from heat.
  5. Heat a griddle or non-stick pan over medium heat. Grease the cooking surface lightly with butter or oil.
  6. Pour a scoop of pancake batter onto the griddle and spread it slightly to form a circle. Add a spoonful of the caramelized apple pie filling on top of the pancake.
  7. Cook the pancake until bubbles form on the surface and the edges appear slightly set, about 2-3 minutes.
  8. Carefully flip the pancake with a spatula and cook for an additional 1-2 minutes until the other side is golden brown.
  9. Repeat steps 6-8 with the remaining batter and apple pie filling.
  10. Serve the apple pie pancakes warm, topped with whipped cream, a drizzle of caramel sauce, or maple syrup. You can also add chopped nuts for extra crunch and flavor.

Enjoy the delectable combination of apple pie and pancakes in each delicious bite! These apple pie pancakes are perfect for a comforting breakfast, a delightful brunch, or even a sweet dessert treat.
