Recipe 1: Feijoada

  • 1 large onion, finely chopped
  • 4 cloves of garlic, minced
  • 2 bay leaves
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Water, as needed

Optional Garnishes:

  • Orange slices
  • Farofa (toasted cassava flour)
  • White rice
  • Collard greens

Instructions:

  1. Rinse the black beans under cold water and remove any debris. Soak the beans in water overnight or for at least 8 hours. Drain and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped bacon and cook until it starts to brown and release its fat.
  3. Add the pork shoulder to the pot and brown it on all sides. Once browned, remove the pork and set it aside.
  4. In the same pot, add the sliced sausage and cook until it begins to brown. Remove the sausage and set it aside.
  5. In the remaining fat in the pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent and the garlic is fragrant.
  6. Return the pork shoulder and sausage to the pot. Add the soaked black beans, bay leaves, and enough water to cover everything by about an inch.
  7. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for about 2 to 2 ½ hours, or until the beans are tender and the meat is cooked through. Stir occasionally and add more water if needed to keep the beans covered.
  8. After the beans and meat are cooked, remove the bay leaves and season the feijoada with salt and pepper to taste. If desired, you can also add other spices like cumin or paprika for additional flavor.
  9. Simmer the feijoada uncovered for another 15-20 minutes to thicken the sauce slightly.
  10. Serve the feijoada hot with white rice, collard greens, orange slices, and a side of farofa. The combination of these traditional accompaniments complements the flavors of the feijoada.

Ingredients:

  • 2 cups cassava flour
  • 4 tablespoons butter
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 4 slices of bacon, chopped

  • Optional: Additional ingredients like olives, sausage, or nuts for variation

Instructions:

  1. Heat a large skillet or frying pan over medium heat.
  2. Add the butter to the pan and allow it to melt.
  3. Add the chopped onion and minced garlic to the pan and sauté until they become translucent and fragrant.
  4. Add the bacon to the pan and cook until it becomes crispy and golden brown.
  5. Gradually add the cassava flour to the pan, stirring continuously to coat it evenly with the butter and incorporate the flavors.
  6. Continue toasting the cassava flour mixture for about 5-8 minutes, or until it turns a light golden color. Stir occasionally to prevent burning.
  7. Season with salt to taste and mix well.
  8. If desired, you can add additional ingredients such as olives, sausage, or nuts at this stage for added flavor and texture. Sauté them along with the farofa mixture for a few minutes until they are heated through.
  9. Remove the pan from the heat and let the farofa cool slightly before serving.
  10. Serve the farofa as a side dish or accompaniment to your favorite Brazilian dishes, such as feijoada or grilled meats.
